Lettuce

Lactuca sativa

Lettuce are a part of the daisy family. There are two kinds of head lettuce: butterheads (like Bibb lettuce) and crispheads (like iceberg lettuce). Butterheads usually have soft heads with oily leaves while crispheads possess brittle leaves with harder heads.

Harvesting

Before the lettuce has reached maturity, you can harvest leaves individually, removing outer leaves, and allowing the inner leaves to grow. To harvest whole heads and to keep your leaves growing for additional harvest, leave an inch of the plant above the soil.

Uses

A popular green for anything! Lettuce can give your sandwich, wrap, or burger a refreshing crunch. Full of Vitamin K lettuce strengthens bones, and  is a great way to keep your body hydrated.
